For the Florentine style beans, soak the dried beans in plenty of cold water overnight. The next day, chop the garlic and leeks and put them in an ovenproof dish together with the drained beans and the chopped tomatoes. Season with salt and pepper and cover with fresh water.

Close the mold and cook in the preheated oven at 200°C for at least 1 1/2 hours and serve the beans hot Florentine style.

The beans become particularly tasty in the Florentine style if you also roast 100 g of streaky bacon.
