Mix the flour, salt, grated nutmeg and water well with the mixer for about 5 minutes. Then leave to swell for at least 10 minutes. Put a pot with water and a little salt and bring to a boil. Scrape the dough into the water with a spaetzle slicer and reduce the heat. Leave the spaetzle in the water for only a short time and take them out again immediately. Done. Now you can continue to process the spaetzle.
