Pit the plums, peel the apples and remove the core, cut both into small pieces. Put fruit, orange juice, lemon juice and zest in a pot.
Halve vanilla bean, scrape out pith and add to fruit. Place cloves and cinnamon in a tea infuser and add to fruit.
Boil everything until soft, remove the tea infuser and then strain the fruit mixture. Add jelling sugar and rum and boil for 5 minutes until bubbly.
Pour into clean jars and seal well immediately.
Preparation Tip:
If you do not want to use red wine, you can use grape juice.
