A more wonderful asparagus recipe:

Rinse asparagus spears. Cut woody ends into small pieces. Remove the peel from the lower third of the asparagus spears. Cut the spears into 3 cm long pieces.

Boil a good 1 liter of water with salt and a pinch of sugar. Make asparagus peels and ends and a sprig of tarragon 15 minutes.

In the meantime, peel and chop onion, roast in clarified butter until golden. Peel the potato, dice it and add it to the onions with a little bit of salt and a little bit of water. Cover and cook until tender.

Drain asparagus stock into another saucepan, do asparagus sections in it for 7 to 8 min, lift out. Mash half of the asparagus (but not the heads) with potato cubes, 3/4 liter of the asparagus stock and the whipped cream. Fold in tarragon leaves and the remaining asparagus spears and season the soup with salt and freshly ground pepper to taste. Cut the fish into pieces and arrange on top of the soup.
