Mix 250 gr of wholemeal flour, salt and the water ( boiling ) and pull covered 30 min. Press a well into the dough. Here mix the sugar, the yeast, half of the 405 and the lukewarm milk to a porridge and rise again 30 min. Then stir in the remaining flours and let rise for another 30 minutes. Pour into a baking pan, let rise for 10 min. and then bake for 60 min. at 200 degrees in the middle ( with water bowl ).

You need a little more time, but you will be rewarded with a wonderful tasting, aromatic and juicy bread.
