Maybe your new favorite bean dish:

Make the long grain rice in boiling hot water with a tiny bit of salt. (See “Fried long grain rice” for instructions).

Scoop out the crab meat if using fresh crab (see “Tip”). Pick apart the crab meat or cut the crab meat sticks into 3 or 4 pieces.

Heat the oil in a preheated wok and sauté the ginger and scallions for about a minute. Add the sugar snap peas and fry for another minute. Sprinkle turmeric, cumin and salt and pepper over the vegetables and mix well.

Add the crab meat as well as the mussels and roast for 1 minute. Stir in the cooked long grain rice as well as the bean sprouts and roast for 2 minutes until hot and well mixed.

Season well with salt and freshly ground pepper and bring to the table hot on the spot.

Or break off, beat with a heavy kitchen knife or crack open and scoop out the meat with a skewer or fork.
