For the croquettes, boil the potatoes, peel and strain. Mix in the yolks and a pinch of freshly grated nutmeg. Shape the potato mixture into sticks 1.5 cm in diameter and 4 cm long.

Dredge in egg, flour and bread crumbs and fry in hot oil at 160 to 170 °C. Drain on a kitchen towel and serve as a side dish.
