Cut ham and leek into fine strips (lightly fry ham and leek if necessary), season with salt, nutmeg, pepper and oregano and add cheese.
Roll out puff pastry on a floured cloth, add filling with créme fraîche to the center of the pastry rectangle and roll into a strudel.
Brush the surface with a yolk. Form a garnish from the leftover dough and place it on the surface of the dough.
Bake the cheese and leek strudel in the oven preheated to 190 °C for about 45 minutes until golden brown.
