For the spiantnocks, wash the spinach and let it collapse in a little hot water. Squeeze well and puree with a hand blender. Mix with the remaining ingredients and let the dough stand for a while.
Spoon dumplings from the dough and place in boiling salted water. Let the dumplings cook, then lift them out with a perforated scoop. Drain the spinach dumplings, toss in butter and sprinkle with grated cheese.
