Instructions:

For the rice meat, finely dice the onion and bacon, cut the meat into coarse cubes. Put the bacon in a frying pan (an enamel pan is best) and fry it together with the lard.

Add the onion and slowly roast until golden brown. Remove the pot from the heat and mix in the tomato paste.

Stir in the paprika powder, put in the meat, add the pressed garlic, season with marjoram, lovage, salt and pepper and the bay leaves.

Now add the Parmesan rind and let it steam for about 40 minutes in its own juice, covered and stirring frequently.

Now add 2/3 l water, pour in the rice, stir and bring to the boil. Now cover and cook on low heat for about 20-25 minutes until the rice is done.

Arrange the rice on plates and sprinkle with the freshly grated parmesan.

Preparation Tip:

The best accompaniment to rice meat is green salad.
