Peel the onion and cut into small cubes, as well as the lean bacon. Fry the bacon in a frying pan and sauté the onion cubes in it until soft. Rinse the mushrooms, cut into quarters, steam in hot butter until soft and add to the bacon and onion mixture in the frying pan together with the cooked potatoes.

Beat eggs with milk and season with salt. Dice the sausage and stir it in. Add the chives. Add the other ingredients to the frying pan. After max. 2 min. taste with a spatula if the mixture separates from the bottom.

Then slide the hunting sausage pan onto a heated plate and bring to the table.
