Instructions:

For the Westphalian Easter cake, preheat the oven to 200 degrees. Warm the buttermilk slightly. Finely dice the cherries and place in the bowl of a food processor with the remaining ingredients, except the powdered sugar and lemon juice.

Allow to knead on medium speed. Butter a loaf pan and knead the dough again by hand on the work surface. If it is still too wet, add a little more flour until nothing sticks to your hands.

Pour the dough into the loaf pan and place in the preheated oven for about 45 minutes. Then remove the Easter cake from the loaf pan and let it cool well on a cooling rack.

Make a thick glaze with the powdered sugar and lemon juice and coat the Westphalian Easter cake with it. Alternatively, you can replace the fruit with different types of nuts.

Preparation Tip:

Very good tastes the Westphalian Easter cake, if you spread a slice of it with butter. It goes well with a cup of fresh coffee.
