For the strawberry syrup with rose water, rinse the strawberries with cold water and remove the leaves and the stem. Cut them into pieces. Grate some lemon peel and squeeze out the juice.

Bring 500 ml of water to a boil with the sugar. Simmer until the sugar has dissolved. Now add the strawberries, lemon zest and juice and the citric acid. Boil for 4 minutes until bubbling, then remove the pot from the heat and let it steep for 20 minutes.

Line a strainer with a cotton cloth and filter the strawberry mixture through the strainer into a saucepan. Add the rose water and bring the syrup to the boil again.

Fill the strawberry syrup with rose water still warm into carefully cleaned bottles and close them immediately. Store in a cool and dark place.

Preparation Tip:

A dash of strawberry syrup adds color and flavor to a glass of Prosecco.
