For the strawberry syrup, wash the strawberries well and cut away the leaves with the stem. Cut the fruit into quarters and place in a pot. Now pour so much water on it that the strawberries are well covered.

The water should reach about a finger-thick height above the fruit. Bring everything to a boil and let it simmer for about 8 minutes. Then remove from heat and allow to cool.

While cooling, stir in the sugar and the juice of half the lemon. It is best to let it sit overnight in the refrigerator or in a cool place.

The next day, strain and boil the juice again. Pour the boiled strawberry syrup into clean bottles and preserve in the oven at 130 degrees for 15 minutes.

Preparation Tip:

With the leftover strawberries you can boil down a compote. Add a little cinnamon, sugar and cloves and boil well. Preserve in clean jars in the oven.
