Instructions:

For the strawberry slices, first prepare the sponge mixture. Beat the egg whites until very stiff, add the sugar and continue beating.

Fold in the egg yolks, water and sifted flour. Spread the dough on the baking tray and bake at 180 °C until light.

For the cream, whip Qimiq well, add sugar and vanilla sugar, mix in curd and stir in strawberries, fold in whipped cream.

For the strawberry topping, soak gelatin in cold water and squeeze out. Heat in a saucepan with some strawberry puree, gradually stir in some of the strawberry mixture, stirring constantly.

Now mix the jelly mixture with the rest of the puree. Cut out pastry bases with dessert rings and leave them in the molds.

Fill up to 3/4 of the moulds with the cream and fill up to the rim with the berry mixture. Leave the molds to set overnight in the refrigerator.
