Instructions:

For the saddle of venison, cream butter, yolks and sugar, mix with softened chocolate, grated nuts, the firm snow and flour sifted with baking powder, pour into a buttered, floured pan and bake at 180 °C top/bottom heat for about 40 to 45 minutes.Once cooled, cover the saddle of venison with chocolate icing and, if desired, cover with peeled, slivered almonds.
