Season lamb racks, fry briefly in Alsan, wrap in foil and finish roasting in the oven at 180°C for 10 minutes. (should still be slightly pink inside) Peel potato, cut in half and brush with olive oil. Season with sea salt and bake at 200°C for 30 minutes.
