Melt the yeast in water with sugar. Sift the flour into a suitable bowl, add the ingredients, knead with salt and butter. Form into a roll on a floured surface and cut into 12 pieces. Continue to roll out the pieces individually diagonally by hand until they are each 40 cm long. Now form pretzels and let them rise for 10 minutes with the lid closed.

In the meantime, boil water with baking soda and place the risen pretzels in the boiling water for 1 to 2 minutes. Later, remove them with a slotted spoon and place them on a tray lined with parchment paper. Sprinkle with coarse salt. Heat the oven to 225 °C, cover the pretzels and let them rise again.

Then bake for about 20 minutes.

Instead of pretzels, you can also make cheese pretzel sticks (with grated Emmental) or filled pretzel rolls (filled with cream cheese or ham).

Tip: Always use an aromatic ham, it will give your dish a wonderful touch!
