Preheat the oven to 190 °C. Crumble the yeast and dissolve in the cup of water. Sift the flour into a bowl and make an indentation in the center.

Pour in the dissolved yeast and mix with the flour. Gradually add water and salt (adjust amount of water if necessary). Work the dough well until it bubbles and comes away from the bowl.

Lift onto a floured surface and form a long roll. Cut into about 15 equal pieces and roll the dough into rolls (about 30 cm ): The rolls should be thick in the middle and thinner at the ends.

Shape the dough rolls into pretzels, cover and let rise for 10 minutes. In the meantime, boil enough water with the baking soda, let the pretzels slide in and, after half a minute, carefully remove them with a foam lifter.

Place on the greased and dusted baking sheet, sprinkle with coarse salt and put the pretzels in the oven for about 25 to 30 minutes.

Preparation Tip:

Sprinkle pretzels additionally with caraway seeds or other spices of your choice.
