Instructions:

First, for the base, mix yeast with a little hot water and stir gently until the yeast has dissolved. Let this mixture rest in a warm place.

Mix the flour with a little salt, the yeast, the olive oil and the rest of the water. Knead the dough until it is smooth and elastic. Form a ball and let it rest covered with a cloth.

For the tomato sauce, mix the peeled tomatoes together with the garlic, chopped herbs, a pinch of salt, sugar and pepper, a teaspoon of vinegar and 3 tablespoons of olive oil. Then season the sauce with a few drops of TABASCO® Brand Pepper Sauce to achieve the desired spiciness…,

For the topping, clean, wash and dry spinach. Sauté briefly in a pan and season with salt, pepper, garlic and nutmeg.

Divide the dough into 4 equal parts. Spread flour on the work surface and roll out the dough. Place on a baking sheet and spread with the tomato sauce.

Top with the spinach, cherry tomatoes, ham and mozzarella. Bake for 10 minutes in an oven preheated to 200 °C.

Remove from the oven, crack an egg on top of each one and sprinkle with grated Parmesan.

Put the pizza back in the oven for another 15 minutes, until the bottom is golden brown and the eggs are cooked.
