Instructions:

For the pizza muffins, first preheat the oven to 180 °C. Grease the muffin pan cavities or line with paper cups. Wash the peppers, remove the seeds and cut into small cubes. Cut the salami into slices.

In a bowl, mix the dry ingredients baking soda, flour, baking powder, salt, cheese, onion, spices and the diced peppers.

In another large bowl, crack the egg. Add the oil, buttermilk, tomato sauce, and salami pieces (reserve a few) and mix well. Last, mix in the dry ingredients (just until everything is moistened).

Pour the batter 3/4 of the way into the muffin tins. Sprinkle the grated parmesan on top and place the remaining salami slices on top. Bake the pizza muffins at 180 °C on the middle rack for 20-25 minutes.

Preparation Tip:

If the pizza muffins are eaten at a later time, they can be baked again with grated cheese for about 3-4 minutes.
