For the pistachio cheesecake, first prepare the cookie base. To do this, finely crumble the butter cookies and mix well with the melted butter. Line the bottom of a round baking pan with baking paper and spread the butter cookie mixture flat in it and press it down well.

Melt the chocolate coating slowly in a saucepan. For the cheesecake mixture, mix all ingredients together well, empty onto the cookie base and smooth out, bake in a preheated oven at 170 °C convection oven for about 45-50 minutes.

Remove from oven, let cool slightly and portion the pistachio cheesecake into equal-sized pieces.

If you want to omit Nutella and bake a light version, then instead of Nutella and the dark chocolate coating simply use 200g melted white chocolate.
