For the olive salt, grind the olives with half of the salt in a food processor until very fine. Then mix in the remaining salt.

Most of the time there is still some moisture. Therefore, sprinkle the salt on a baking tray covered with baking paper and let it dry out at room temperature.

When the olive salt is completely dry, pour into small jars.
