Heat a heavy frying pan and dry roast the black cumin, coriander, cumin and anise seeds and the almond kernels over a gentle heat for 1-2 minutes, stirring continuously, until the spices begin to smell fragrant. Remove the frying pan from the heat.

2. bring the remaining ingredients and 1 pinch of salt to a boil in a heavy saucepan, stirring continuously. Reduce temperature and simmer gently over low heat for 15 minutes, stirring frequently, until thickened.

Add the spices and simmer gently for another 5 minutes, stirring frequently. Remove the saucepan from the stove and cool. Serve immediately or fill into a sterilized screw jar and close tightly.

Tip To sterilize the jars, place them in a saucepan with boiling hot water for 10 minutes. Then dry in a 140 degree oven for 15 min with the opening facing up.
