For the Linzer eyes, first preheat the oven to 180 degrees. In the meantime, quickly prepare the ingredients (except jam) into a shortcrust pastry. Shape the dough into a ball, wrap it in cling film and let it rest in a cool place for 30 minutes.

Then roll out the dough on a floured board. Using a round cookie cutter, cut out discs and half of them with a serrated cutter with a hole in the center. Brush with egg and sprinkle with sliced or possibly slivered almonds.

Line a baking tray with baking paper and place the cookies on it. Bake in the preheated oven for about 8-12 minutes until light yellow. Check again and again. Remove the cookies and let them cool briefly.

Bake the slices and the rings. Then brush the bottoms without the hole with jam, sprinkle the rings with powdered sugar and place on the coated cookies.

Preparation Tip:

Linz eyes taste best with homemade apricot jam.
