For the curd pistachio slice, first separate the eggs. Beat the egg whites with a pinch of salt until stiff. Beat the egg yolks, powdered sugar and vanilla sugar until foamy. Mix the curd cheese, pistachio pudding powder and finely chopped pistachios into the yolk mixture.

Fold in beaten egg whites. Line a small baking dish (approx. 22 x 28 cm) with the wholemeal butter cookies and spread the pistachio cream on top. Bake in the oven at 170 °C.

Preparation Tip:

If you like, you can decorate the curd pistachio slice with additional chopped pistachios or half pistachios.
