Instructions:

For the curd blueberry brownies, line a rectangular baking pan (approx. 20×30 cm) with baking paper. For the brownie base, melt the butter.

Beat the sugar, eggs and vanilla sugar until fluffy and mix in the butter. Mix the flour with the cocoa powder and salt and add to the egg mixture, mix well and spread in the baking pan until smooth. Preheat the oven to 160 °C top and bottom heat.

For the curd layer, whip the egg with the sugar and vanilla sugar until frothy. Add the curd, yogurt, lemon juice and lemon zest, mix and carefully spread on the brownie base. Wash blueberries and top the curd layer evenly with them.

Put the pan in the oven and bake for about 60 minutes. Remove the cake from the pan with the baking paper and let it cool. If you like, sprinkle some powdered sugar on the curd blueberry brownies before serving.

Preparation Tip:

The curd blueberry brownies also taste very good warm, but then they fall apart easily. Cold they can be cut better.
