For the bulgur salad, pour enough boiling water over the bulgur to cover it and let it sit for about 30 minutes. Meanwhile, finely chop the scallions. Blanch the tomatoes (briefly scald them), peel off the skin, remove the seeds and cut into small cubes. Cut the washed lettuce into fine strips.

Drain the bulgur, if it has not absorbed all the liquid, and mix in the prepared vegetables and chopped herbs. For the dressing, combine the tomato paste, paprika, chili, pomegranate syrup and lemon juice. Slowly whisk in the olive oil. Mix with the bulgur and let the bulgur salad stand for about 2 hours.
