For the field hare in red wine-chocolate sauce, salt and pepper hare parts and dust with flour. Fry onion and root vegetables in a pan. Put in hare parts and brown all around. Deglaze with red wine, add spices and lemon zest, bring to a boil, cover and let steam for about 75 min.
