Open oysters and remove the oyster meat. Use only tightly closed oysters – discard those with open glass shells.

Wrap each oyster in a narrow slice of bacon, hold together with skewers, sprinkle freshly ground pepper. Place oyster roulades in mold, bake in heated oven in 10 to 1500 cmin until crisp. Serve hot to the table with lemon slices and toast. The oysters can be grilled ditto. Distance from grill bars about 100 mm.

Grill for 3 to 4 min. on each side. To taste, coat the baked or grilled oysters with toasted breadcrumbs (use only butter for this).
