Instructions:

Chop shallots, garlic and half of the thyme. Cut rabbit legs in half with a large kitchen knife and season with salt and pepper. Mix the garlic and thyme and turn the rabbit pieces in it to the other side. Lay out bacon slices on countertop and roll rabbit pieces in bacon with 1/2 bay seasoning and a sprig of thyme. Tie tightly with kitchen twine. Cut tomatoes into quarters and remove seeds.

Brown the rabbit legs in a Reindl with olive oil. Add tomato quarters and shallots and steam everything together in a heated stove at 180 °C for 15 minutes. Later, add the finely chopped dried tomatoes and sauté for another 15 minutes.

Arrange the drumsticks. In the resulting sauce add the mixed kitchen herbs form and season strongly with salt and freshly ground pepper, pour the sauce. Serve the rabbit legs with baguette or pita bread.
