For the potato chips tortilla, heat the olive oil in a pan and sauté the onions until translucent.
Beat the eggs in a bowl, season with salt and pepper and whisk. Add the chips (crumble the larger chips a little) to the egg mixture. Add this to the pan with the onions as quickly as possible so that the chips don’t get too soggy.
Fry the potato chips tortilla for about 5 minutes on each side.
Preparation Tip:
If you want your potato chip tortilla spicier, you can also mix a little Tabasco under the egg or use paprika chips.
