Instructions:

Season the turkey heartily on the outside and inside. Cut the apples and onions into rough cubes, put them in a suitable bowl and season lightly with salt and pepper. Pluck the thyme, add it, mix everything together and stuff into the turkey. Tie the legs of the turkey with a string and then roast it at 140-150 °C for 2, 5 to 3 hours.

For the sauce, remove the peel from the onions, carrots, and celery and cut them into large cubes. Sauté the vegetables with a little oil and extinguish with red wine. Rinse the leek, cut it into rings and add it as well. Fill everything up with poultry stock and simmer the sauce for 1 hour on low heat. Then strain the sauce and refine with whipped cream.

Now let the sauce bubble up again and season to taste with the spices. Just before serving, chop the fresh chervil and sprinkle over the top.
